雕爺牛腩 Diaoye Niunan



牛腩是香港隨處可見的街頭美食,一直是話題十足的北京雕爺,在幾年前遠赴香港拜見食神,大手筆的500萬港幣買下了食神神秘的牛腩秘方。北京雕爺牛腩就此誕生,試圖把食神的牛腩推廣到神州各地。

2015年古魯奇公司受邀為雕爺牛腩打造品牌全新形象店,為了將文化引入空間設計,設計團隊將品牌目標客戶的文人雅士與白領客群與中國古代的士大夫作了對話,士大夫即中國古代的知識份子,興起於唐宋年間,敗落於清末,正是這樣一批文人騷客推動著文化才有今天中國文化的百花齊放。

富村山居文人雅士圍繞曲水而聚,吟唱絕代風華的情境成為了古魯奇設計試圖還原的用餐體驗。進入餐廳首先映入眼簾的是層層山脊疊加空間,轉身不入用餐區,山脊環繞著用幾個獨立餐區,山的外圍則是現代演繹的曲水流觴,就如富春山居圖裡人坐在山中,臥於水旁,望著層層疊疊的山水,簡約內斂的設計手法,古老的文化現代的詮釋,期待引起客人用餐的詩意聯想與體驗。

Niunan is a street food everywhere in Hong Kong, has been a topic full of Mr.Diaoye. In a few years ago traveled to Hong Kong audience with the God of chef, generous 500 million Hong Kong dollars bought the God of chef mysterious brisket recipe. Restaurant Diaoye Niunan was born in Beijing, a newcomer who sets foot in with an ambition to spread the local Hong Kng style Niunan to the rest of China.

Commissioned to conceive a contemporary identity for their new concept restaurant, Golucci international design integrates the tradition of culture in the spatial design by reinterpreting a Chinese ink.  the design team will target client's brand of literati and white-collar passengers for dialogue with Chinese ancient literati group, the literati and officialdom that Chinese ancient intellectuals, emerged in the period of Tang and Song Dynasty, decline to in late Qing Dynasty is such a group of literati poet driven culture today is Chinese culture of flourishing.  

Fu Cun Shan Ju literati Qushui around together, singing anatomia situation become the design team attempted to restore the dining experience. Enter the restaurant first Yingru eye is layer upon layer ridge spatial overlay, turned into the dining area ridges around with several independent dining area and the periphery of the mountain is a modern interpretation of the winding rivers, people sit in the mountains, lying on both sides of the water, one layer upon layer of landscape, restrained minimalist design techniques, ancient culture and modern interpretation and look forward to cause diners poetic Association and experience.

we can see a central feature are a group of tables, where guests sit on what appear as floating platforms, surrounded by fog covered walkways.

Separating the tables, are perforated metal screens that have been shaped like mountains.
